3 tsp. curry powder
2 tbsp. fresh coriander
250 ml. coconut milk

½ tsp. chili flakes

Pour oil into a sauce pan over medium heat. Add garlic, onions, and carrot. Fry for five minutes, reduce heat to low, and stir continuously. Mix green curry paste, turmeric, and chili, and add into the pan. Next, add lentils, quinoa, tomatoes, and coconut milk, and bring pan to a boil. Then, reduce heat to low, and simmer for five to seven minutes. Lastly, pour lemon juice, season with salt to taste, and garnish with a dollop of vegan yogurt and top with fresh parsley.
